The soft water they use for brewing comes from Mount Hakusan, a UNESCO Biosphere Reserve and one of Japan’s three holy mountains. Sourced from a depth of 150 meters underground, this water allows them to produce easy-to-drink “tanrei karakuchi,” a light and dry style of sake. A five-person brewing team makes sake in small batches using in-house yeast, which they prefer for its ability to accentuate the umami from the rice.
