Junmai
“Junmai” can be translated as “pure rice.” This is sake that does not contain added brewer’s alcohol; the only ingredients are water, rice, koji and yeast. Unlike other sake categories, junmai has no set rice polishing ratio, so it can be richer and bolder than other sake types. These sake usually hold well at warmer temperatures, and can generally be paired with strongly flavored foods.
There are countless delicious and affordable junmai in the Palate Project collection, ranging in price from under $20 to $60 — although aged junmai can cost more. Not sure where to start? Bold, dry and nutty, Zuiyo “Hojun” hails from the Kyushu region where slow-cooked meats and sweet, viscous soy sauce abound. Suigei “Tokubetsu Junmai” is a beloved, food-friendly sake with just a touch of umami. A consistent gold-winning sake, the clean, bold and dry Asabiraki “Suijin” is the Iwate-based brewery’s signature product. Happy tasting!
