The Last Brewery in  Kyoto’s Yamashiro Region and Their Quest for the Ultimate Local Sake

Founded in 1895, Joyo Brewing Company is the only remaining sake brewery in Kyoto prefecture’s Yamashiro area. While Kyoto often brings to mind bustling tourist centers, this dedicated group of artisans can be found in a quieter part of the prefecture, halfway between the former imperial capital and Nara. Here they craft small-batch sake guided by the belief that Kyoto’s sake should be produced entirely within Kyoto, mainly using local resources.  

Joyo Brewing Company used to produce about ten times as much sake as they do now, but they abandoned the pursuit of volume in favor of limited production and strict quality control. As a result, they are able to deliver authentic local terroir through an elegant lineup — from premium bottles to everyday table companions — defined by a signature refinement that elevates any meal.

The philosophy of “bikan yuso”

At the heart of Joyo Brewing Company is the concept of “bikan yuso”: appealing to the senses with beauty, playfulness and originality. While the brewers’ pursuit of unrivaled quality and authenticity is a serious one, they also consider it their duty to bring joy to every drinker. Their versatile range of sake reflects their desire to  produce Kyoto sake that partners flawlessly with cuisine.  In terms of taste, that means bringing umami, elegant acidity and a crisp finish to the fore. 

The bikan yuso philosophy is a natural extension of their uniquely beautiful location; the city of Joyo, aka Village of Plums, is home to the Aodani Plum Grove — the largest plum orchard in Kyoto prefecture. Joyo Brewing Company has been making “umeshu” (plum wine) with this orchard’s endemic Joshuhaku plums since 1991. Upon reaching peak ripeness, this plump local fruit exudes a delightful, peach-like aroma, resulting in highly-rated plum sake that stands out amongst those of other breweries.

A brewery worker uses a “dakidaru” — a metallic canister filled with water — to help regulate the temperature of a small batch of fermentation mash.

Purity from 330 feet below

The defining element of their elegant, food-friendly profile is the pristine underflow water of the Kizu River, drawn from 330 feet underground. They use this ultra-soft water in every aspect of sake making, even prioritizing using Kyoto-grown rice nourished by this very same water source. This ensures a pure expression of the local terroir.

During the cold winter months, the brewmaster and team dedicate themselves to diligent manual labor. They deliberately choose to brew in exceptionally small batches of less than 1 ton. Rather than relying entirely on machinery, they meticulously guide the fermentation process by hand, challenging themselves every year by test-brewing to constantly refine their craft.

Scientifically optimized traditional methods

To ensure their sake functions as the ultimate companion for your meal, the brewery employs scientifically optimized traditional techniques. They painstakingly bottle their sake — which does not undergo any additional fining — by hand at peak freshness, and use a highly labor-intensive, one-time hot water bath pasteurization method. The bottles are then strictly refrigerated between 23 F and 41 F. This rigorous quality control traps a fresh, lively essence that’s noticeable upon opening, allowing the flavor to evolve beautifully as you drink. This uncompromising approach has earned them gold medals at international competitions such as the International Wine Challenge in London, establishing their position as a premium craft brand.
