Established in 1972 through the merger of three local breweries, Rokka Brewing Company carries a heritage that stretches back to 1719 in Hirosaki, Aomori prefecture. Deeply rooted in the “joppari” (stubborn) spirit of the Tsugaru region, the brewery creates a true “Aomori terroir” by utilizing local rice, subsoil water from the sacred Mount Iwaki, and natural lactic acid bacteria from the Shirakami-Sanchi UNESCO World Heritage Site. Their modern brand, Torai, represents a bold evolution of this 300-year legacy, blending artisanal hand-tooling with data-driven precision to produce sake that is both sophisticated and deeply connected to the wild landscape of northern Japan.

A chance encounter and a shared vision

In 2025, our team attended a tasting event with a specific mission: to find a brewery that truly embodied the future of Japanese sake. Amidst the crowded hall, Rokka Brewing Company’s booth immediately caught our eyes with its striking, sophisticated design. Upon tasting their sake, we were instantly captivated; the flavors were remarkably clean, balanced and delicious. We approached them on the spot about bringing their craft to the United States. At that time, our internal processes for direct importation were still being built, but the team at Rokka Brewing Company chose to take a leap of faith with us. This mutual trust allowed their “Torai” series to become the very first trial of our direct import program, marking a historic milestone in our journey to share exceptional sake.

A brand forged through consensus

The Torai brand was born not from a marketing agency, but from the collective soul of the brewery workers during a period of professional crisis. As the demand for traditional local sake declined, the entire staff engaged in exhaustive discussions, refusing to move forward until every single person was in agreement. They chose the name Torai (杜來) with deep intention: “To” (杜) comes from the word for “toji” (brewmaster), while “rai” (來) is an ancient form of the character for “future,” that visually incorporates the character for “people.” It signifies a commitment to carrying traditions into the future through mutual support and human connection. This philosophical shift was accompanied by a physical move to a new, state-of-the-art facility at the foot of Mount Iwaki, where they invested in modern machinery to ensure consistent, world-class quality through meticulous temperature control.

The wild heart of the Tsugaru region

Rokka Brewing Company’s dedication to their home is visible in every bottle. To make their sake approachable and memorable, they designed labels featuring animals native to the forests of Mount Iwaki, such as the rabbit, antelope and monkey. The liquid inside is a complete, Made-in-Aomori creation, blending local yeast and koji with the crisp subsoil water of the mountain. Their facility is designed to harmonize with this landscape, featuring a shop with massive windows that offer a breathtaking view of the peak. This connection to the local community is so strong that their sake is a staple in the souvenir shops and izakaya (Japanese pubs) throughout Hirosaki, serving as a liquid ambassador for the region’s natural beauty.

Tomonobu Oose, sales manager

Tomonobu Oose joined Rokka Brewing Company after working in other beverage sectors. Though the brewery is located over five hours from Tokyo, he travels often to share their meticulously crafted sake. His dedication has helped their 2023 rebrand, Torai, rapidly gain popularity. Oose is deeply proud of their uncompromising methods. He loves Torai “Monkey” so much he orders it at Tokyo restaurants, even though he enjoys it freely back home.
