MEET THE BREWERY

Dassai makes one thing only

Founded in Yamaguchi in 1770. When the current chairman took over in 1984, the brewery was close to collapse. It rebuilt around one thing only: junmai daiginjo. Rice is still washed by hand, to within 0.3% moisture.
