A Bold Leap From Silk to Sake: The Legacy of Kyoto’s Fushimi

For eight generations, the Saito family thrived as kimono merchants in Kyoto’s historic Fushimi district. However, in 1895, as the rise of railways transformed Japanese commerce, 18-year-old Sotaro Saito made a daring pivot to sake brewing. Today, Saito Brewing Company is a pillar of excellence, famously earning 14 consecutive gold medals at Japan’s most prestigious national competition. Their Eikun brand captures the refined elegance of the former imperial capital, offering balanced, food-friendly sake crafted with the pure spring water for which Fushimi is legendary.

The 18-year-old’s vision

In the late 19th century, the Industrial Revolution brought railways that altered the flow of people and goods, threatening the traditional port-side kimono trade. At just 18 years old, Sotaro Saito recognized this shift and chose to reinvent his family’s legacy. He traded fine silks for the art of fermentation, eventually naming his premiere brand Eikun to honor both his father and the superior quality he aimed to achieve. This spirit of adaptability remains at the heart of the brewery — which celebrated its 130th anniversary in October 2025 — proving that true craftsmanship can survive bold, visionary change.

A champion of Kyoto’s heirloom grain

Saito Brewing Company’s dedication to its heritage is best seen in its commitment to Iwai, an heirloom sake rice that can only be cultivated and used within Kyoto prefecture. Once nearly extinct, the brewery helped lead its revival and now uses more Iwai than any other producer, accounting for over 30% of the prefecture’s total yield. The brewers carry immense pride about this unique grain; by mastering the delicate balance required to brew with it, they create sake that they feel mirrors Kyoto’s sophisticated culinary culture.

Modern precision meets ancient water

Unlike the weathered wooden structures often associated with sake breweries, Saito Brewing Company operates out of a sleek, three-story facility designed for modern efficiency. Here, they utilize a vertical gravity-flow system where rice begins at the top and gradually transforms as it moves downward. At the foundation of this process is the “heaven-sent” water of Fushimi, drawn from a deep well located right on the property. This medium-hard water remains naturally cool year-round, providing a consistent base that allows their brewmaster to achieve the crystal-clear, smooth finish for which the Eikun label is world-renowned.
