Because of strict laws, opening a new sake brewery in Japan is virtually impossible. In 2024, Tsuboguchi Food Service assumed the license of a brewery with a 140-year-old history, desiring to preserve local sake making as Gotemba Ishikawa Brewing Company. Located at the foot of Mount Fuji, they brew with underground snowmelt water from the mountain, as well as locally grown Koshihikari rice. With a relatively young, passionate team in place, they have already started winning accolades for their sake. Their logo, an endless loop of woven strands in the shape of Mount Fuji, represents relationships connecting people.
