Matsumoto Brewing Company was founded in 1791 in the Fushimi Region which is famous for their stable, quality water source. The brewery, built in 1922, is designated as a National Heritage site, and serves a beautiful backdrop for the forward-thinking sake making with interest in expressing the terroir from each plot in every bottle. Their brand Shuhari embodies the concept of breaking ground while building on tradition and knowledge of meticulous brewing passed on through the generations. They also mature their sake at 23 degrees Fahrenheit to capture the freshness in their slightly effervescent sake.
