Harnessing the natural gifts of Nada
The brewery’s exceptional quality is deeply rooted in the natural gifts of Nada, where freezing winter winds known as “Rokko oroshi” sweep down the mountains to cool freshly steamed rice efficiently. Their water source features mineral-dense properties that fuel vigorous yeast fermentation, imparting a crisp, structured profile to their signature expressions. While Hakutsuru is historic, a devastating fire during World War II prompted them to aggressively incorporate computer-controlled machinery during reconstruction. This pivotal transition allowed the brewery to achieve remarkable consistency and stable pricing, proving that technology could beautifully preserve flavor.
The passionate quest for proprietary rice
In 1995, the brewery embarked on a bold challenge to develop a new rice variety that could rival the king of sake rice, Yamadanishiki. By crossing Yamadaho and Wataribune No. 2, the two ancestral strains of Yamadanishiki, and executing meticulous selection over eight years, they successfully created Hakutsurunishiki in 2003. This unique grain yields larger “shimpaku” (starchy core), lower proteins, and higher durability during polishing. To take complete responsibility for their ingredients, they established the agricultural corporation Hakutsuru Farm in Tamba-Sasayama in 2015, ensuring a stable supply of premium rice while actively preserving the local ecosystem through rice-paddy cultivation.
Blending precision data with clean labels
Hakutsuru manages fermentation at an incredibly precise level by analyzing extensive chemical data, yet they refuse to let numbers entirely dictate flavor. For premium lines like “Tenku,” everything is crafted by hand, relying on the sharp, intuitive senses of the human brewmaster. This innovative spirit also extends to consumer transparency. Long before clean labels became a global trend, the technical teams spent over a year replacing animal-derived gelatin in the clarification process with a natural blend of persimmon tannin and seaweed. Today, their entire lineup is completely vegan-friendly and gluten-free, reassuring diverse drinkers across 55 countries.
