Nabedana Brewing Company delivers the ultimate expression of freshness in Fudoh “Junmai Ginjo” Origarami by achieving a vibrant harmony of sweetness and acidity. This unpasteurized “nama” sake releases an inviting aroma of fresh lychee and pear. It floods the mouth with a pure, freshly pressed juiciness that feels intensely alive. The subtle presence of rice lees brings a slight milkiness. A faint sparkle whispers across the tongue, leading to a clean, crisply refreshing finish. This highly popular limited release is usually only available in Japan during the “shinshu” (new sake) season in early spring, but a select batch was reserved exclusively for Palate Project customers in the U.S. Keep chilled and open carefully, as the bottle may pop.

The story

Founded in 1689, Chiba prefecture’s Nabedana now embraces a fearless spirit willing to challenge centuries of tradition. By transitioning to an entirely in-house brewing team at the turn of the 20th century, they’ve been able to brew pure, unpasteurized sake that captures the vibrant essence of local rice and medium-hard water. Nabedana doesn’t just preserve their more than 300-year legacy — they continue to enhance it.

With the help of our shipping partner’s extensive network, we maintain the quality of our items as they make their way around the United States.
