This “umeshu” (plum wine) is made by steeping high-quality ume fruit in the brewery’s aged junmai sake. Three years of aging gives the sake depth, lusciousness and a mellow sweetness. The natural tang of the ume provides some acidity to cut through the richness. Discover everything this sake has to offer by experiencing it at different temperatures and mixing it with soda water.

The story

Three brothers now carry on a sake tradition their family began in Chiba’s Kururi over 300 years ago, guided by one rule: wash the rice thoroughly. That devotion gives Fukuiwai its clean, celebratory character, and makes this small brewery worth seeking.
