Jabara is a rare citrus from Kitayama, a small village in Wakayama prefecture. A naturally occurring hybrid of yuzu and kunenbo — a Japanese orange citrus — jabara offers strong aroma and acidity for a pleasantly tart flavor. Known as a miracle fruit, it’s rich in vitamins, antioxidants and anti-inflammatories. Both the juice and the peel are used in this sake. Enjoy it on the rocks, mixed with soda or beer!
