This premium junmai daiginjo reimagines a previous, well-loved release by using the traditional kimoto method for greater depth of flavor. The mash, crafted from locally grown Yamadanishiki rice, is hung in bags and pressed only by the natural weight of gravity — a time-consuming and luxurious technique that collects fine, delicate sake drop by drop. This sake offers elegant aromas of white peach and apple, with a palate that is remarkably pure and refined.
