This is very limited, experimental sake produced in small batches. ”Perlwein,” a German term for a lightly sparkling wine, reflects the use of German white wine yeast. It’s somewhat sparkling, so open carefully! Refreshing, low ABV and easy to drink, it delivers a soft texture and juicy flavor characteristic of Hokkaido-grown Ginpu rice. Subtle lees drift like flurries on the wind. Pair it with robust Italian pasta sauces and cheeses.
