This sake’s cherry-blossom pink color comes from red yeast, which is notoriously difficult to handle. Using a proprietary technique and carbonation injection, Yonetsuru Shuzo Co., Ltd. crafts a rare, playful sparkling sake. Its initial profile of yogurt and strawberry leads into a subtle rice umami as the soft bubbles settle. At 9% ABV, it’s incredibly sessionable and easy to drink. It won gold in its category at International Wine Challenge 2022.
