This is the unpasteurized version of the brand’s original, award-winning junmai daiginjo. Skipping pasteurization gives this nigori a more vibrant juiciness, as well as a yogurt-like tang. A hint of grapefruit-like bitterness lingers on the finish. Pair this sake with rich foods such as hamburgers, blue cheese, or decadent desserts like tiramisu. Because it is unpasteurized, enjoy it fresh and keep it refrigerated after opening.

Tucked into Tsunan, one of Japan’s snowiest towns, Naeba Brewing Company has crafted sake since 1907. Led by a 29-year-old brewmaster, it specializes in the rare, labor-intensive “ichidan-jikomi” one-step method to produce lush, vibrant Yuki no Mayu sake.
