Yuki no Mayu translates to “snow cocoon,” referring to the chilly, powdery prefecture of Niigata. Whereas most sake is pasteurized twice, this junmai ginjo has not undergone any pasteurization. This gives the brew a more lively acidity and refreshing taste. But first, enjoy being greeted by sweet aromas of pear and lychee. Serve this nigori young and well-chilled in a wine glass — or even on the rocks!

Tucked into Tsunan, one of Japan’s snowiest towns, Naeba Brewing Company has crafted sake since 1907. Led by a 29-year-old brewmaster, it specializes in the rare, labor-intensive “ichidan-jikomi” one-step method to produce lush, vibrant Yuki no Mayu sake.
